This honey is harvested straight from our hives and is as raw and fresh as you can get. Once spun from the comb, we run our honey through a course strainer and then right into the jars.
This local honey will vary as the season changes depending on when it was harvested and what flower sources were availible at that time. In this area, early spring offers a very light honey mainly from honeysuckle bushes and black locust trees. Towards the early summer the bees start to bring in clover honey which is medium in color and flavor. In fall, goldenrod is the main flower source for the bees and tends to be a darker, bold honey.
Though we are trying to expand our hives to fill the demand, this is our most popular honey and we only get so much a year. Once we are out we won't have more until the following season. Thank you for your understanding.
